ABOUT UNCLE GEORGE

Renowned as both a waterman and a chef, Uncle George's roots run deep in the soil of Maui. His affinity for the ocean – manifested through fishing, diving, and surfing – was matched only by his profound compassion for his fellow humans.

Born in Wailuku, a decade preceding Hawai‘i’s statehood, Uncle George embarked on a journey that led him from H.P. Baldwin High School to service in the U.S. Navy during the Vietnam War. Upon his return, he pursued his passion for culinary arts at Kapi‘olani Community College on O‘ahu. His culinary journey culminated in a distinguished career as a cook at the Pacific Beach and Pagoda Hotel in Honolulu.

Despite grappling with the aftermath of war throughout his life, Uncle George embraced his passions wholeheartedly, filling each moment with the warmth of family and friendship. His generosity knew no bounds, often sharing his culinary creations with both loved ones and strangers alike.
