About Us
Crafting artisanal fresh unpasteurized tempeh on the island of Maui. Providing a peaceful protein™ for the people.

What is tempeh?
Tempeh is a traditional Indonesian food made from fermented soybeans.

However, Tru Tempeh is never made from soy! We make our tempeh from yellow split peas. It has a nutty and savory flavor and a firm texture.

To make our tempeh, the yellow peas are soaked, cooked, dried, and then mixed with a starter culture of Rhizopus mold. The mixture is then left to ferment for a period of time, usually about 36-40 hours, during which the mold grows and binds the yellow peas together into a cake-like form.

Tempeh is a rich source of protein, fiber, and various vitamins and minerals, making it a popular choice for vegetarians and vegans. It can be used in a variety of dishes, such as stir-fries, sandwiches, salads, and even burgers. In addition to soybeans, tempeh can also be made with other types of beans, grains, or seeds.

Health benefits of consuming tempeh:

High in protein: Tempeh is a good source of plant-based protein, containing about 15-20 grams per 100 grams of tempeh, depending on the variety. This can help support muscle growth, repair, and maintenance, as well as keep you feeling full and satisfied.

Rich in nutrients: Tempeh is also a good source of various vitamins and minerals, including iron, calcium, magnesium, and B vitamins. These nutrients are important for maintaining healthy bones, teeth, and blood cells, as well as supporting energy production and overall vitality.

Low in fat: Tempeh is relatively low in fat, especially saturated fat, which can help promote heart health and reduce the risk of chronic diseases like diabetes, obesity, and high blood pressure.

Fermented food benefits: Like all fermented foods, tempeh contains beneficial bacteria that can help support gut health and improve digestion. Fermentation also enhances the bioavailability of certain nutrients, such as iron and zinc, making them easier for your body to absorb.

Versatile ingredient: Tempeh can be used in a variety of dishes, such as stir-fries, salads, sandwiches, and more. It adds a hearty texture and nutty flavor to meals, making it a tasty and nutritious ingredient to include in your diet.

Why a peaceful protein™ ?
Tempeh is often considered an environmentally and socially sustainable food source. It is a plant-based protein source that requires fewer resources to produce than animal-based protein sources, such as meat and dairy. Growing legumes requires less water, land, and energy than raising livestock for meat and dairy products.
